“Granada” is a typical Majorcan pie usually made with eggplant, ham and eggs, breadcrumbs used for pan gives it a crunchy touch. It is a summer dish that can be eaten cold accompanied with a homemade mayonnaise or tomato sauce. You can also made with zucchini, cauliflower or green beans, depending on the season. It is kept well out of the refrigerator and is delicious between two slices of bread, so it’s also ideal for a picnic.
For 6 person
3 medium zucchini
100 gr. Cured jam
4 large eggs
½ tsp nutmeg
Wash and cut the zucchini into small cubes, salt and put in a colander and leave for 15 minutes.
Grease a 20 cm cake pan with butter and sprinkle with bread crumbs.
In a pan with a little olive oil saute the zucchini and ham a few minutes, let cool slightly.
Beat eggs and add to the zucchini and cured ham, season with pepper and nutmeg, usually not necessary to add salt because we salted zucchini before and cured jam also adds salt to the mixture.
Pour the mixture into the pan, sprinkle the top with some bread crumbs and bake for 45 minutes.
Cool and remove from the pan.It can be served cold or warm, delicious with a homemade mayonnaise or tomato sauce.
