Lentils with vegetables.

Serves: 4

Ingredients:

  • 300 gr lentils.
  • 200 gr pumpkin or zucchini diced.
  • 1 onion chopped.
  • 3-4 carrots sliced.
  • 1 tomato chopped.
  • 1 head of garlic, with a cut around.
  • 1-2 bay leaves.
  • 10-12 romaine lettuce leaves finely sliced.
  • 6-8 chards leaves finely sliced.
  • 1 tsp. “de la vera” or sweet paprika (“de la vera” has a smoky flavour)
  • 5 tbs. olive oil
  • Salt
  • Water

 Method:

In a saucepan heat de olive oil, sauté the onion a few minutes and add the tomato, sauté a few minutes more. Add the carrots, pumpkin or zucchini and paprika stirring frequently, 2 or 3 minutes, be carefully not burn the paprika.

Add the lentils, bay leaves and garlic, cover with cold water and bring to boil. Cook for about 40 minutes, check if the lentils are soft and then add the lettuce and chard, cook for 12 minutes more.

Cooking time of the lentils can vary depending of your choice.

You can add chorizo or pork meat.
