“Greixonera” curd cheese cake


“Greixonera” is a type of clay pot used to cook many dishes, eg “sopes” or “frit”. It is also used for cooking in the oven.

If you don’t have, don’t worry, you can use a ceramic or glass tray or individual ramekins.

  • 400 gr curd cheese
  • 200 gr sugar
  • 5 eggs
  • grated lemon zest
  • 1 TSB Cinammon
  • 80 gr milk
  • Butter


Greasing the tray with butter.

In a bowl, mix the sugar, cold milk, lemon zest and cinnamon, stir to the sugar has dissolved, add curd cheese, blend and check if it is sweet enough.

Beat the eggs and combine with the cheese mixture.

Put the filling in the tray and bake at 180 degrees for 50 minutes or you can check that it is ready, insert a knife or knitting needle into the centre of the cake. If the implement comes out clean (i.e. with no cake mixture adhering to it), the cake is baked.

Serve in the same tray when cold.

You can sprinkle powdered sugar and cinnamon.
